Coconut Lemon Blueberry Granola

INGREDIENTS:

Dry Ingredients

3 cups Organic Rolled Oats 1 cup Crushed or sliced almonds 2/3 cups Pumpkin Seeds/Pepitas 1/2 cup Hemp Seeds 1/4 cup Flax Seeds 1/4 cup Chia Seeds 1 cup Coconut Flakes Lemon Zest (6 lemons)

Melted Ingredients

1/2 cup Honey (I use Wasatch Nectar) 1/2 cup Coconut Oil

Topping

1 cup Dried Blueberries

 

Preheat Oven to 350 degrees Use a little coconut oil to coat baking sheet (or use parchment paper). ADD all dry ingredients into a large bowl and mix together. Melt coconut oil and honey and add in. Mix everything together and spread evenly on baking sheet. Bake for ~20 min or until granola is light brown. Add dried blueberries to the baked granola. Keep in air-tight container for easy access to yummy granola for my favorite breakfast!
